Ingredients

  1. 12lasagna noodles
  2. 2eggs- lightly beaten
  3. 2 1/2 cupricotta cheese
  4. 2 1/2 cupshredded mozzarella cheese (10 oz)
  5. 1/2 cupgrated parmesan cheese
  6. 1pk. (10 oz ) frozen chopped spinach , thawed and squezzed dry
  7. 1/4 tspsalt
  8. 1/4 tspground black pepper
  9. 1/4 tspground nutmeg
  10. 1jar 26 oz. meatless spaghetti sause

    Preheat oven to 375° .

    Cook lasagna noodles according to box. Meanwhile in a large bowl. Combine the eggs , cheeses, spinach, salt , pepper.and nutmeg.

    Drain noodles. Spread 1/3 cup cheese mixture over noodles. Carefully roll up.

    Pour 1 cup spaghetti sause into ungreased. 13 x 9 x 2" baking pan Place roll ups seam side down

    Top with remaining sause. I added cheese in top.

    Bake uncovered, at 375 ° . For 20-25 min. Or until heated through.

I added several different more cheeses to the ricotta. Like cream cheese, a little bit of sour cream, cottage cheese, and four cheese shredded Italian and I rolled them up on top of the sauce then I had it more cheese on top then layered lasagna noodles and then put another layer of rolled up lasagna noodles and then sauce and then tons of cheese on top it wound up being a thick lasagna and turned out wonderful thank you.
