Ingredients

  1. for pork
  2. 12 to 6 pound one in pork loin roast
  3. 1 tbspolive oil
  4. for pork seasoning
  5. 2 tbspsour cream
  6. 1 tspcajun seasoning
  7. 1/2 tspgranulated garlic or garlic powder
  8. 1/3 tspblack pepper and salt to taste
  9. 1 tsphot sauce, such as Franks red ot
  10. 2 tbspgrated parmesan cheese
  11. for gravy
  12. 2 1/2 cuppork stock, recipe attached in direction step #9 Note, If you don't want to make pork stock use a mixture of low sodium chicken broth and low sodium beef broth
  13. 2 tbsppan drippings from roast pork, add butter if there is not enough to equal 2 tablespoons
  14. 2 tbspall-purpose flour

Cooking Instructions

    Heat a large skillet with the olive oil. Sear pork in hot oil concentrating on browning the fat and quick searing the sides and bottom about 5 minutes total time.

    Preheat oven to 500°F. Have a roasting pan sprayed with non stick spray ready and large enough to hold your roast. Score the fat on the top of the pork loin with a sharp knife, not cutting through to the flesh.

    Mix all seasoning ingredients in a small bowl. Brush pork all over lightly with seasoning blend, this makes enough for a large roast if your roast is small you will not use it all. Just a light coating is needed.

    Place pork roast in prepared baking pan. Bake 5 minutes at 500°F then decrease the oven temperature to 300°F. Roast 40 minutes for the first 2 pounds of meat and 15 minutes for each additional pound of meat. You want the internal temperature to be 145°F to 150°F so remove it from the oven when the temperature reaches 135°F to 140°F. It is best to use a meat thermometer during the cooking. Let roast rest for a minimum of 10 minutes before carving. Remember it is ok for pork to be a little pink.

    Meanwhile make gravy. Heat roasting pan with the 2 tablespoons pork drippings,whisk in flour until blended. Cook on low heat for 2 minutes.

    Add pork stock (recipe attached below) and simmer until it is to your desired thickness. Serve with pork and enjoy.

    Serving size will depend on the size of pork loin you cook. For a 2 pound roast it will feed 3 to 4 people. A larger 6 pound roast should feed 6 to 8 people with sides.
