My Family's Favorite Baked Macaroni And Cheese

Ingredients

  1. 1 tspVegetable oil
  2. 1 lbElbow macaroni
  3. 8 tbspButter
  4. 1/2 cupColby cheese, shredded or cubed
  5. 1/2 cupMonterey Jack cheese, shredded
  6. 1/2 cupMild cheddar cheese shredded
  7. 1/2 cupSharp cheddar cheese shredded
  8. 4 ozExtra sharp cheddar cheese, cut into small chunks
  9. 2 cupHalf-and-half
  10. 1 cupVelveeta processed cheese, cut into small cubes
  11. 2 largeEggs, lightly beaten
  12. 3/4 tspSeasoned salt
  13. 1/4 tspGround black pepper

Cooking Instructions

    Preheat oven to 350. Lightly butter (or spray) 2 1/2 quart casserole dish.

    Bring large pot of salted water to boil over high heat. Add the oil and the macaroni, and cook until macaroni is just tender, about 7 minutes. DO NOT OVERCOOK!!! Drain well, return to pot.

    In a small saucepan or microwave, melt 8 tbs. butter. Stir into macaroni.

    In a large bowl, mix all the cheeses.

    To the macaroni, add the half-and-half, the eggs, seasoned salt, and pepper.

    Pour into casserole dish. Dot with butter and sprinkle with remaining cheese.

    Add the cheese to the macaroni, saving enough to sprinkle on top.

    Bake for 40-45 minutes, until bubbly around the edges.

Hi Janet. I like this recipe! I made it a few weeks ago. May make it again after Christmas as a side for family meal. Very good. I will post a photo when i make it again :)
