Ingredients

  1. 4 largepeeled, cubed and boiled until cooked through sweet potatoes
  2. 1/2Red /purple onion (sliced thinly)
  3. 1Red delicious apple (chopped into small cubes)
  4. 1celery thinly sliced
  5. 1/3 cupdried cranberries
  6. 1/4 cupslivered almonds (or walnuts)
  7. 1salt and pepper the sweet potatoes to taste after they are cool
  8. Sauce
  9. 1 tspminced garlic
  10. 1 1/2 cupmayo
  11. 1/3 cuphoney mustard
  12. 1 tspbrown sugar

Cooking Instructions

    Boil the prepared sweet potatoes until softened, run cool water over them, salt and pepper to taste and allow to come to room temperature.

    Mix the sauce ingredients then add all of the ingredients together and gently stir until barely combined. Serve warm or chill in fridge.
