Ingredients

  1. Pork shoulder, sliced
  2. Panaeng curry paste
  3. 2 cupscoconut milk (500 ml)
  4. Pea eggplants
  5. leavesKaffir lime
  6. Kaffir lime leaves, thinly sliced for garnish
  7. Thai basil
  8. Palm sugar
  9. Fish sauce
  10. Red and yellow chili peppers

Cooking Instructions

    Marinate the pork with soy sauce, sugar, and egg white. Then simmer with half of the coconut milk until the oil separates.

    Add the panaeng curry paste and stir until well combined.

    Add the pea eggplants.

    Add the pork to the curry and simmer.

    Mix the remaining coconut milk with a little water to thin it, then add to the pot to reach your desired consistency.
