Ingredients

  • 2 tablespoonspanaeng curry paste
  • 1/2 teaspoonfish sauce
  • 1 teaspoonsugar
  • 1 cancoconut milk
  • 10kaffir lime leaves
  • 10red Thai chilies
  • 1/2 cupwater (about 120 ml)
  • 1.1 poundspork shoulder (about 500 grams)

Steps

    Wash the pork and slice it thinly.

  2. 2

    Wash the kaffir lime leaves and slice them thinly. Remove the stems from the chilies and set aside.

  3. 3

    Heat a pan over medium heat. Add half the coconut milk and cook until the oil separates. Stir in the curry paste and cook until fragrant. Add the pork and stir-fry until just cooked. Pour in the remaining coconut milk and water. Simmer until the sauce thickens and the oil rises to the top. Add the chilies and cook until just softened.

    Turn off the heat, sprinkle with the sliced kaffir lime leaves, and serve on a plate.
