Cooking Instructions

Heat oil in wok, medium to high heat. Add curry paste and cook, stirring constantly till fragrant (1-2 minutes)

Add meat and stir until opaque on all sides, 2-3 minutes. Add 10 Kaffir lime leaves, beans, chillies and cook for further 2 minutes

Add palm sugar, White sugar. Fish sauce and basil. Stir well, then remove from heat and transfer to platter

The past few months, it's been all about Indian-style curries in our house, so the time seemed right to get back to some Thai-inspired flavours. Normally I would've made my own curry paste, but having been Halloween, time was at a premium and convenience won out. The recipe below is pretty mild heat-wise (for my daughter), so feel free to throw a chili or two into the mix to spice it up.

I found this recipe on YouTube from RinS CookBook. I used Mae Ploy Red Curry Paste as recommended in the video. I'm not a big fan of bamboo shoots so I added snow peas later in the recipe instead. I am in the process of adjusting the recipe to find the right balance for me. You can use less curry paste to make this a milder dish.
