Banana bread

I'm so happy with this recipe and how this turned out, like seriously it's so yummy.
So I had a load of extremely ripe bananas just sitting around in the fruit bowl, so I thought what better way to use them up- banana bread!
This recipe is vegan of course, so there is no eggs or dairy here and it uses Stevia (a natural sweetener) and maple syrup instead of processed cane sugar. It's a really satisfying cake that you can also have with spreads on top of!
My boyfriend "helped" me with this one and when I say help I mean try to eat the ingredients, the mixture and generally be annoying. He did take the photographs so I guess that made up for it.

Cooking Instructions

Preheat oven to 175°C (350°F) and grease or line a loaf tin/dish
- 2
Prepare chia egg by mixing chia seeds and water together in a cup and put aside for 5 minutes

Mash bananas in a mixing bowl until they form a purée
- 4
Add all dry ingredients
- 5
Add all wet ingredients (including chia egg) and then mix together
- 6
Pour into loaf dish

Bake in the oven for 1-1 hour and 15 minutes

I had some bananas at home that were going bad, and had just gotten mangos and pineapples at the farmer's market that day, so I decided to make my own tropical version of banana bread, as I couldn't find a recipe I liked online. My hubby is diabetic, so I ended up tweaking a basic recipe I had found online by halving the amount of butter it called for, and adding coconut sugar (and less of it) for regular white sugar. Didn't have raisins, so I used prunes and added extra fruit..figured if my hubby ate this recipe, it would not only increase his fruit intake, but keep him regular too!
