Yaki Udon

Yaki Udon is a Japanese stir fried noodle dish made with udon noodles, meat (typically thinly sliced pork), vegetables, and seasoned with a soy sauce base and sometimes oyster sauce or Worcestershire sauce like Yakisoba. This recipe uses bonito powder to add some umami to the soy sauce base :-)

NOTE: I use frozen udon for this recipe.

Gather all the ingredients.

Cook udon according to the package directions. Set aside.

Oil in a stir fry pan over medium heat.

Add the meat and cook until almost heated through.

Add the cabbage, onion, pepper and shimeji.

Cook for 2-3 mins or until the veggies wilt.

Add udon and toss to combine.

Add all the seasoning ingredients and toss to combine.

Taste, adjust with salt/soy sauce as needed.

Serve.

You can swap the protein (beef, chicken, shrimp, tofu) and use whatever leftover veggies from your fridge!
