Cooking Instructions

Add oil and butter. Do not heat it too much. Add crushed garlic, green chillies and ginger. Add spring onions, green peas and methi.

Add salt and cook it without cover. Let it burn the water from methi.

Add rice in that. Mix it gently. Cover it and cook for some time. Sprinkle with some chopped spring onions. Serve hot.

Kenyan pilau is milder in spice, often paired with beef, lamb, chicken, or served vegetarian with a side of kachumbari (tomato salsa). Unlike yakhni pulao, Kenyan pilau stock is not cooked down; rice is added the first time after bringing the stock to a boil (atleast from my observation in a few Kenyan homes I visited)While I have enjoyed both experiences, I tried my luck at 'mutton yakhni pulao,' preserving the tradition of communal meals.
