    Prep Pork (10 min): Rinse pork cubes and pat dry with a paper towel. Season with a pinch of salt and black pepper.

    Sear Pork (10 min): Heat oil in a large skillet or pan over medium-high heat. Add pork cubes in a single layer and sear until browned on all sides (6-8 minutes). Work in batches if necessary to avoid overcrowding. Remove pork and set aside.

    Sauté Aromatics (5 min): In the same pan, add onions and fry until soft and golden (3-4 minutes). Add garlic and ginger, stirring for 1 minute until fragrant.

    Cook Base (5 min): Add tomatoes (or tomato paste) and cook until they form a thick sauce (3-4 minutes). Stir in curry powder, paprika, and bell pepper (if using). Cook for 1-2 minutes to release spice aromas.

    Simmer Pork (10 min): Return seared pork to the pan. Add water or stock, soy sauce (if using), and Royco (if using). Stir well, reduce heat to low, cover, and simmer for 8-10 minutes until pork is tender and flavors meld. If sauce thickens too much, add a splash of water.

    Finish & Serve (5 min): Taste and adjust salt and pepper. Garnish with coriander or parsley. Serve hot with ugali, rice, or chapati.

    TIPS::: ✓Choose pork with some fat (like shoulder or loin) for juicier results.

    ✓ For extra heat, add fresh chilies or cayenne pepper.

    ✓ Marinate pork in soy sauce, garlic, and ginger for 30 minutes before cooking for deeper flavor (add 30 min to prep time).
