Banana oat bread is surely a familiar item in clean eating menus. Let's make a super delicious and fluffy banana bread together.
Cooking Instructions

Preheat the oven to 350°F (180°C) for 20 minutes. Melt 3 tablespoons of butter and let it cool to room temperature. Mash 2 bananas with the melted butter.

Add 2 eggs, 1/4 cup coconut oil (or vegetable oil), 1/2 cup plain yogurt, and 1 teaspoon vanilla extract to the banana butter mixture. Mix well until combined.

Pour the dry ingredients (2 cups oat flour, 1/2 teaspoon ground cinnamon, and 1 1/2 teaspoons baking powder) into the banana butter egg mixture. Gently mix until just combined. Do not overmix.

Line a baking pan with parchment paper or grease it lightly with butter (or oil). Pour the batter into the pan, filling it 2/3 full. Decorate the top with your choice of toppings.

Bake in the oven at 320-340°F (160-170°C) for 30-40 minutes or until the bread is done (a toothpick inserted comes out clean). Baking time and temperature may vary depending on the oven, so keep an eye on it. If the bread is not done but the top is browning, cover it with aluminum foil.

After baking, let the bread rest in the oven for about 3-5 minutes, then remove and invert the pan to take the bread out. Place the bread on a rack to cool completely before slicing and enjoying.
