I'm always looking for new ways to enjoy oatmeal, which means I like to adapt some of my favorite desserts into oatmeal form. This one is subtle in its sweetness and will help keep you full until lunch time. Your house will also smell phenomenal while it's cooking.

Ingredients

1 serving
  1. 1/2 cupmilk
  2. 1/2 cupwater
  3. 1/2 cupold fashioned rolled oats
  4. 1medium overripe banana, mashed
  5. Pinchsalt
  6. 1/4 tsp.vanilla extract
  7. 1/4 tsp.ground cinnamon
  8. 1/8 tsp.ground nutmeg
  9. 1-2 tbsp.sweetener of choice (optional)
  10. For serving :
  11. Use your favorite oatmeal toppings, for example:
  12. coarsely chopped walnuts
  13. dark chocolate chips
  14. additional sliced banana
  15. nut butter or nutella
  16. raisins
  17. ground flax seeds
  18. hemp seeds

Cooking Instructions

    Place the milk and water in a medium saucepan (nonstick recommended) over medium-high heat. Stir in the cinnamon, nutmeg and vanilla and let it come to a low boil.

    Next stir in the oats, mashed banana, salt and the ground flaxseed (if using). Decrease the heat to medium-low and allow it to simmer for 5-10 minutes, until it reaches your desired consistency.

    Stir in your sweetener of choice to taste. The banana will help to naturally sweeten it, so start out with just a little sweetener. Add whatever toppings sound good to you, then eat immediately.

    Pictured topped with a tbsp peanut butter, coarsely chopped walnuts, ground flax seeds and hemp seeds, with about 1 tbsp of maple syrup for sweetener.

I love to bake and to try out new recipes! I'm always on the lookout for simple dinners for busy weeknights. A lot of the recipes I post on here are ones I've found on Pinterest or from different bloggers, and that I've tried and really enjoyed, but I always reference to where I got the recipe from in the recipe description and the pictures are my own.
