  1. 115 gramsunsalted butter
  2. 125 gramsdiced onions
  3. 454 gramsdiced parsnips
  4. 375 mlwater
  5. 5 gramssalt
  6. 240 mlcream 35%

Cooking Instructions

    In a saucepan, melt the butter at medium heat. Add parsnip and sweat until tender.

    Add the water and cover. Cook for about 10 minutes , or until the parsnip starts to break down. Strain, but keep the liquide separately.

    Purée thé parsnip with the cream. Add some of the cooking liquid if needed.

    Season with salt and pepper.
