Ingredients

1 serving
  1. 1 cuprice
  2. 1fairly riped plantain
  3. 1cut of fish
  4. 3 tbspveg oil
  5. 1 tbsptomato paste
  6. 2Onions
  7. Thumb size chopped ginger and garlic
  8. Spices
  9. Seasoning
  10. 1 cupBlended pepper
  11. Handfulcabbage
  12. 2carrots
  13. Halfcapsicum
  14. 1small portion of parsley
  15. 1/4 cupchopped cucumber
  16. 1 tbspmayo
  17. 1 tbspketchup

Cooking Instructions

    Wash rice with warm water and drain, add 2tbsp oil in a pot, add some finely chopped ginger, garlic and onion, add tomato paste,blended pepper and saute, add the rice, boiled water, spices and seasoning,stir and lower the heat, cover and cook for 15 to 20mins. Then add vegies and cover to steam for 7-10mins

    Wash fish and drop in a pot, add 1tbspoil, ginger, garlic, onion, spices, seasoning, blended pepper and a cup of water then set on fire and let it cook gor 10mins, serve warm

    Cut the wrapped plantain into thick slanting slices and sprinkle some salt toss and fry until golden brown

    In a bowl, add all the veggies, a pinch of salt, black pepper and mayonnaise, mix well and serve

    Then some ketchup to pair with plantain and arrange the plate, server warm and enjoy
