Start with the ganache, which should be made the day before. Bring the heavy cream to a boil. Remove from heat and add the chocolate in pieces, stirring well. Add the butter, mix, pour into a bowl, and refrigerate overnight so it sets and isn't runny.

On the day you assemble, make the shells. Beat the egg whites until they form soft peaks. Gradually add the sugar in three parts as you continue beating. The meringue is ready when it forms stiff peaks. Add the cocoa powder and beat until fully incorporated.

Next, blend the almond flour and powdered sugar together until you have a fine powder.

Add this powder to the chocolate mixture and fold gently. Use a spatula to press and smooth the batter until it flows in a ribbon when lifted.

Transfer the batter to a piping bag fitted with a plain tip and pipe the macarons in staggered rows. Preheat your oven to 290°F (145°C) with convection. Let the shells sit for about 15 minutes to form a skin, then bake for 12 minutes and let cool.

Take the ganache out of the refrigerator and transfer it to a piping bag with a plain tip. Pair up the macaron shells by size, then fill them with the ganache.

Enjoy! You can store them in an airtight container in the refrigerator for up to 5 days.

Also be careful to follow the instructions when performing the macaronage. Also be sure to properly dry the macarons. If it's difficult to make them all the same size, before squeezing out the dough, draw small 2.5 cm circles on the underside of the parchment paper to make it easier. I prefer to make these myself at home and just play around with the flavors, as there's really nowhere to buy them where I live...not to mention they can be pricy when I do find them (anywhere from $2-$5 per cookie!) They can be finicky and they require patience. Once you master the basic recipe, you can make endless flavor variations. I'm by no means an expert, but this is the basic recipe that I use. To make them different colors, use 2-4 drops of gel food coloring and add it to the eggs once soft peaks have formed, then continue to whip them into stiff peaks. Keep in mind that they will turn out a shade or so lighter after baking than the batter is initially. You can also add up to 1/4 tsp. of a flavored extract at the same time as the food coloring. This recipe aims to create the ultimate moist and rich macaron without using cocoa powder.-If you use fresh egg whites, the macaron shells will crack and the "pied" or "foot" of the macaron will not form properly. You have to use old egg whites.-The success of Italian meringue depends on the temperature of the syrup and when you add the egg white.
