Spicy garlicky potatoes recipe from Gujarati cuisine

Potatoes/Baby potatoes steam or pressure cook till they are cooked well. If pressure cooking then cook for 2 whistle.it should not overcook. Keep all ingredients ready. When they are still a little warm peel them cut into small pieces and keep aside.

Take a small grinder jar next add chopped tomatoes, 5 to 7 garlic cloves,ginger, Kashmiri red chilli powder, coriander powder, turmeric powder, salt according to taste, add 1 tbsp water and grind it to a smooth masala paste. Keep aside.

Heat 3 tbsp oil in a pan. Once oil heat in a medium pan add cumin seeds, mustard seeds,hing, curry leaves, add the above paste stir and mix the spices. Saute the masala on a low to medium flame till it becomes glossy and u see oil releasing it from sides. Add salt as per taste. Add little water. Add potatoes. Stir very wel. Cover the pan. Simmer for 6 to 7 minutes. While serving you can garnish with some chopped coriander leaves.

Serve lasaniya batata with chapatis, phulka roti or thepla(mixed masal roti)/ jowar roti.

Note: In this recipe you can also add lilte more water to make this recipe in a form of semi gravy. It's optional.
