This is my quick fix hot Jollof and any protein works with it and it’s yum 🤤

Ingredients

  1. 1 cupBasmati Rice
  2. 1/4 cupveg oil
  3. 2fresh tomatoes
  4. 2fresh tatashe
  5. 4shombo
  6. 1onion
  7. 1green bell pepper diced
  8. to taste Salt
  9. 2knorr cube
  10. 1/2 kgpork chop
  11. 1 tspgarlic and ginger paste

Cooking Instructions

    Par boil pork chop with blended pepper, onion, a little garlic and ginger paste, salt and knorr cube once it ready turn off heat and set aside

  2. 2

    Wash basmati rice with hot water and set aside; blend tomatoes, pepper, onion, Tatashe and shombo and set aside

  3. 3

    Heat up vegetable oil and once it’s hot, add garlic and ginger paste, stir for few seconds then pour in blended tomatoes, don’t stir, allow it fry till the oil start to float on the top stir and keep stirring until the sour taste is gone

    Add salt and knorr cube, add in your pork chop and any meat stock available, stir in washed rice and add more water if necessary.

    Reduce heat to medium, make sure to adjust ingredients after adding water, allow it cook till the water evaporates and rice is soft

  6. 6

    Reduce heat to the lowest, fluff your rice, then add green bell pepper, stir then turn off heat and serve.
