Ingredients

2 servings
  1. 1 bagsmall shrimp
  2. 1 packagesticky rice
  3. 1/2 cuppickled Asian vegetables
  4. Japanese barbecue sauce
  5. 1 cupsteamed edamame
  6. Marinated cucumbers
  7. Rice vinegar
  8. Chili oil
  9. Minced garlic
  10. Coconut aminos

  1. 1

    Prep the cucumbers night before. Add ingredients to a bowl and mix. Let sit overnight.

  2. 2

    Add shrimp to Ziplock bag. Add Japanese barbecue sauce until it covers shrimp. Let marinate for at least 30 minutes.

  3. 3

    Add avocado oil to hot skillet. Add shrimp to skillet. Cook on each side for 2-3 minutes or until sides begin to brown

  4. 4

    Steam edamame

  5. 5

    Steam sticky rice

  6. 6

    Add all ingredients to bowl and top with Japanese barbecue sauce and sriracha.

I love tangy, spicy foods! However never seen picked Asian vegetables, except Kimchi where I live- I hope I find them, sounds like it will add so much flavor to this bowl-yum!
