Delicious Kabocha Squash and Spinach Soup

Cooking Instructions

Microwave the kabocha until soft (8 minutes at 600 W).

Microwave the spinach until soft (2 minutes at 600W).

Add 2 tablespoons of hot water to a pot and dissolve the consomme stock.

Cut the kabocha and spinach into small pieces and add to a blender with 100 ml of milk, and purée. Transfer the purée to a pot.

Add the rest of the milk to the blender, blend, and return to the pot.

If you add the milk in 2 batches it reduces the amount of puréed spinach and kabocha that gets left behind in the blender, meaning less waste and an easier clean-up.

Heat the soup in a pot and it's done.

If you want to serve it cold, dissolve the consomme in hot water, then mix it with the purée in the bowl.
