This original Italian liqueur is 25% proof, called Meloncello. Made from the freshest ripe melons possible and a neutral flavored alcohol like vodka or rum. A freshness contest, we use only two hours between harvest and infusion.

Not to be confused with Lemoncello Liqueur made from lemons.

Honeydew melons and cantaloupe are now ripe, time to make melon liqueurs through infusion. Melons are low in sugar but great in flavor. To extract, we infuse the fruit two weeks or longer.

The original Italian liqueur is called Dolce Cilento Meloncello. Delicious as after dinner drink, or poured over icecream.

Ingredients

Infusion, 2 weeks
2 people, 2 jugs, one year
  1. 2ripe fresh honeydew melons cut in cubes, white/green
  2. 2 bottlescane sugar rum, 100 proof, for honeydew melon
  3. 2fresh cantaloupe melons cut in cubes, orange
  4. 2 bottlesvodka, 100 proof, for canteloupe melon
  5. 4 cupscane sugar
  6. 4 cupswater
  7. 4 Tspvanilla extract
  8. Equipment: fruit press or sieve or cheese cloth, gallon ziplock freezer bags, airtight sanitized gallon glass jug with metal cap, shrink wrap, funnel, paper towel filter
  9. Cost: vodka $20, rum $20, melons farm free or $4, sugar $1

Steps

Infusion, 2 weeks
  1. 1

    Remove melon seeds. Place freshly cut orange melon pieces of one whole peeled cantaloupe melon in a gallon ziplock bag. Place cut green/white honeydew pieces in other gallon bag. Immerse cantaloupe with bottle of 100 proof vodka, honeydew with 100 proof rum. Infuse two weeks in bottom of refrigerator. Flip daily.

    When infusion liquid has got the color of the melon, taste, pour off liquid and mash the green and orange melon cubes in fruit press or cheese cloth bag or sieve. Filter leftover liquid through sieve in funnel. Add second bottle of alcohol. You should have half a gallon of each infusion.

    Make simple syrup with equal amounts of 1 cup cane sugar and 1 cup water, add 1 Tsp vanilla extract, boil till clear, cool, add to vodka or rum infusion. Taste. Add additional cups of simple syrup to taste. When perfect, Pour in airtight glass jugs. Store in dark pantry. Liqueurs will clear in a few weeks.

    To make sure metal screw cap on gallon jug is airtight, add plastic film wrap to jug glass top and then tighten metal screw cap. Meloncello keeps it freshness year round. Delicious.
