I was searching for a chickpea taco recipes online when I came across a picture that inspired me to make these tacos. This was perfect timing because I had red cabbage in the fridge and a ripe avocado I needed to use. These tacos are vegetarian (and vegan) and are done in less than 20 minutes. Taco Tuesday !

I love bacon however this recipe doesnt have bacon in it because I'm trying to keep it healthy. I've recently discovered that red onions can take your meal to the next level and help with crispy fatty taste cravings.I can easily see how this can become a egg BLT taco with some bacon though 🥓😁
