I was searching for a chickpea taco recipes online when I came across a picture that inspired me to make these tacos. This was perfect timing because I had red cabbage in the fridge and a ripe avocado I needed to use. These tacos are vegetarian (and vegan) and are done in less than 20 minutes. Taco Tuesday !

🌮 Vegetarian Chickpea Tacos 🌮

Ingredients

  1. 3soft flour tacos
  2. 1/3 cupchickpeas
  3. 1/3 cupred cabbage
  4. 1Hass avocado
  5. 1 tbspTaco seasoning
  6. 4 tbspOlive oil
  7. Salt and pepper to taste
  8. 1 tbsplemon juice

Cooking Instructions

    Assemble all ingredients. Over medium-high heat up a pot with 2 tbsp of olive oil and add red cabbage. Sauté for 2 minutes, mixing constantly, then lower heat to medium and cook covered for another 2 minutes. Remove from heat and set aside.

    In the same pot, add another 2 tbsp of olive oil and add chickpeas. Mix in taco seasoning and after mixing well, cover and cook for 5 minutes.

    In the meantime, in a bowl add avocado, and smash it with a fork. Add lemon juice, a drizzle of olive oil salt and pepper, and mix well.

    Warm up flour tacos in the over or stove.
    For assembling tacos: On a warm flour taco, add 1-2 tbsp of guacamole, 1–2 tbsp of chickpeas, and top it off with a few pieces of the sauté red cabbage.

    Serve warm with Spanish rice, Delicious and nutritious 😋
