Ingredients

20 mins
4 people
  1. 2whole onions (optional)
  2. 2 canschopped tomatoes
  3. 50 gsalted butter
  4. Salt
  5. 6eggs
  6. 100 ggrated mozzarella cheese
  7. Bread (optional)

Cooking Instructions

20 mins
  1. 1

Peel and dice your onions. The onions are optional, but they really add a lot to the dish, so I recommend keeping them. You can use just one (or even half of one) if you are not an onion fan.

  2. 2

Start heating up your pan with your butter. Once the butter has melted, add your diced onions and start sweating them.

  3. 3

Once your onions are translucent (should be about 5 minutes), add both cans of tomatoes.

  4. 4

Keep on stirring the pan on medium fire until the mixture loses about half of its water. Add salt to taste.

  5. 5

Break six eggs into the pan and mix well.

  6. 6

Almost there! Add the grated mozzarella cheese. Once again, mix well.

  7. 7

Enjoy! The traditional way of eating it is to scoop it with bread, but feel free to use a spoon if you don’t want to.
