Cooking Instructions

Thinly slice the onion, carrot, bell pepper, and eggplant. Roughly chop the tomatoes. Cut the potatoes into large pieces.

Heat beef fat (or oil) in a pot over medium heat and sear the beef. Once the beef is browned, add the sliced onion and carrot and sauté.

Once the oil is absorbed, add the bell pepper, eggplant, and tomatoes, and continue to sauté. Add 1/2 teaspoon of salt and 1/2 teaspoon of curry powder, and sauté further.

Add 2 cups of water, the bouillon cube, and potatoes. Bring to a boil, then simmer on low heat for about 1 hour. Taste and adjust the seasoning with salt before serving!

Before my father died, he taught me a thing or 2 about cooking. He was brilliant in the kitchen and always made some amazing dishes. This is vegetable soup he made but we called it garbage can soup lol we always had a great time making it and in between the steps, we would play games or just talk.
