Ingredients

  1. 6 cuprice
  2. 1 cupTomato paste
  3. 7habanero Pepper
  4. salt (to taste)
  5. 2bulb onions
  6. 6Knorr cubes
  7. 4 teaspoonsthyme
  8. 4 teaspoonscurry powder
  9. 1 cupgreen pea
  10. 1onions sliced in rings
  11. 4 clovegarlic
  12. 2 tbspginger crushed

Cooking Instructions

    Wash and parboil rice, till its almost tender, rinse the parboiled rice and put in a sieve to drain.

    Prepare sauce (Blend tomatoes, onions, ginger, garlic and habanero pepper to a smooth paste and cook.

    In a sizeable pot, add vegetable oil, dash of salt and add cooked tomatoes paste, fry for about 3mins then add tomatoes paste, fry till it loses that sour taste, add stock cube, thyme, salt and curry, stir in and in bit add water taste to make sure you have the right taste

    Add the drained parboiled rice, the water level should be the same level of the rice. This is to ensure that all the water dries up by the time the rice is cooked.

    Cover the pot and leave to cook on low to medium heat, this way the rice does not burn before the water dries up.

    When the water is almost dry, I usually place foil on the top of the pot, when the water is completely dry, turn off the heat

    Add the green peas and turn the rice with a wooden spoon.Your Jollof rice is ready and can be served.

    We decided to use the smoked chicken Brenda prepared earlier to serve with the jollof rice.
