Ingredients

  1. 1cucumber -quartered and sliced
  2. 2avocados - diced
  3. 1 lbRoma tomatoes - diced
  4. 1/2red onion - sliced
  5. 2gloves garlic - minced
  6. 2 tablespoonsolive oil
  7. 2 tablespoonslemon juice
  8. Halfa bunch of cilantro
  9. to tasteSalt and pepper

Steps

  1. 1

    Cut veggies and place in mixing bowl with cilantro

  2. 2

    Drizzle olive oil and lemon juice

  3. 3

    Mix and refrigerate 30 minutes

  4. 4

    Salt and pepper to taste before eating
