Waina (Masa)

Waina is a popular food in the Northern part of Nigeria, especially with the Hausa's. It is of two types. The one with sugar, it can be eaten without sauce. You can take it with any juice of your choice or hot tea. The one without sugar, it is taken with sauce. Waina can be very delicious, trust me when I said so.

Cooking Instructions

You take 1 cup of the rice and set aside. Wash and soak the 3 cups of the rice. Wash and parboil the 1 cup of rice you set aside, sieve and set aside.

Once the rice is well soaked, you wash and take for grinding. Immediately after grinding, you add your yeast, as it requires warm atmosphere to rise. Add your sugar, chopped pepper and onion and the parboiled rice, mix thoroughly, then cover and keep to rise properly.

If the weather is warm it wont take long to rise but if it is cold, it will take a while. While waiting, you start your fire, put the pan on fire so it will start getting hot. The frying pan is not the normal frying pan, is this "individual mold" the one with 4 molds.

Once your mixture is risen, you will start frying immediately. You will apply your oil in the molds just small so it doesn't stick and not much so it doesn't soak oil.

Within minutes your waina is ready to be served. Enjoy
