Ingredients

Serves 6 servings
  1. 3frozen puff pastry sheets
  2. Vanilla Custard:
  3. 500 mlmilk
  4. 375 mlthickened cream
  5. 70 gunsalted butter
  6. 2 tspvanilla bean paste
  7. 120 gcaster sugar
  8. 40 gcorn starch
  9. 6egg yolks
  10. Icing sugar for dusting

Cooking Instructions

    Bake 3 pastry sheets 200C for 10 minutes of until cooked. Set aside to cool.

    Bring milk, cream, butter and vanilla paste to the simmer.

    In a separate bowl, whisk sugar, corn starch and egg yolk together.

  4. 4

    When the milk mixture reach to 60C, put 1/3 cup milk into the egg yolk mixture. Whisk until combine and put the whole mixture into the milk mixture.

    Return to a pan and cook for 4 - 5 in medium heat.

    Put into a big bowl and cover with cling wrap attach to the custard.

    Let it rest until completely cool.

    Assemble the Vanilla slice dusting with icing sugar.

    Put in the fridge at least 3-4 hours or overnight before you cut and serve with fresh berries or ice cream.
