This has been my favorite way to eat parsnips lately. Add fresh herbs like rosemary to the frying pot and they’ll turn out nice and crispy too!

Ingredients

  1. 2-3parsnips (about 250 g)
  2. Oil for deep frying
  3. 1 sprigrosemary (optional)
  4. to tasteSalt and pepper

    I used one big parsnip and two small ones. Scrub the skin clean. I don’t peel mine but you can if you want.

    Cut into 1 cm sticks or wedges.

  3. 3

    Heat oil (180C/350F if you’re measuring) and put in the parsnips and rosemary. It should be hot enough that it bubbles when you put in the parsnips.

    Fry until the parsnips have a little bit of color.

  5. 5

    Remove and drain over paper towels (fry in batches if needed).

  6. 6

    Sprinkle with salt and pepper, and pieces of the fried rosemary.
