Pickled cucumber

I had this as a side dish for a steak tartare and loved it. The cook told me the recipe and it is too simple to be true.
Please note that the cucumber should pickled at least 4 hours.

Ingredients

  1. 100 gsugar
  2. 100 mlwater
  3. 100 mlwhite vinegar
  4. 1 pinchsalt
  5. 1-2cucumber(s)
  6. 8juniper berries

    Peel cucumber and slice thinly. Pat dry.

    In a small pot mix sugar, water, vinegar, salt and squished juniper berries and heat until sugar is dissolved completely.

    Pour the lukewarm brine over the cucumber slices and let marinate in the fridge for 4 hours. Serve as refreshing side dish. Enjoy!
