Cooking Instructions

  1. 1

    Salt raw scallops lightly and let sit for 15 minutes

  2. 2

    Drain scallops and pat dry

  3. 3

    Coat the scallops with the raspberry sugar

  4. 4

    Melt a little butter in a pan and sear scallops

  5. 5

    While the scallops are being seared, squeeze lime juice over them

  6. 6

    Plate the scallops and drizzle blood orange balsamic vinegar over them
