MasterChef 2019 Quarterfinalist.

I've loved cooking from an early age and, over the years, sharing my love of food, cooking and the benefits of eating well have become passions of mine.

As well as now running my own small food business in my spare time, I also work in the NHS so I regularly see the negative impact poor nutrition and culinary knowledge have on the health of others so, I hope to encourage and inspire others to have a go in the kitchen, try new, healthier dishes and realise that cooking doesn't have to be complicated or time-consuming.

    fresh Gnocchi • onion, diced • good quality Spanish Chorizo, skin removed and cut into pieces (run a knife along the length and then run under cold water to moisten the skin to remove easily) • tomatoes (use good quality whole tomatoes and slice through with a knife or crush with a masher once in the pan rather than using pre-chopped tomatoes) • large or 1 small pepper, any colour, diced • Mozzarella ball, drained and diced • Parmesan, a generous amount grated • Ground white or black pepper

    large handfuls of pasta, I used Penne • Chard and Spinach - 3 large handfuls, washed and sliced. Or any other green veg you have and enjoy • Olive Oil • Pine Nuts, toasted • Freshly Grated Parmesan and Cheddar, or any cheese you have • Black Pepper • Chilli flakes (optional)

    Mushroom Risotto

    Olive or Rapeseed oil • shallot, finely diced • dried Porcini Mushrooms broken into small pieces, soaked in 1 pt boiling water for 30 mins, then reserved to one side • Chestnut Mushrooms, cut in half, sliced and dry-fried until softened and golden brown • large “glug” of dry white wine • Arborio Risotto rice • hot stock, vegetable or light chicken • White pepper • finely grated Parmesan • Small handful of Toasted pine nuts

    Spray oil or Rapeseed oil • cardamom pods, crushed, black seeds removed • fennel seeds • large pinches curry leaves • medium sized onions, finely chopped • medium tomatoes, finely chopped • ginger / garlic paste (pound together equal quantities of fresh garlic and ginger - freezes well in an ice cube tray) • salt or to taste • prawns, deveined • Coriander leaves, finely chopped • Masala blend: 1 tsp ground Black Pepper 1 tsp Chilli powder 1/2 tsp ground Turmeric 1/2 tsp ground Cinnamon 1 tsp ground Coriander
