Korean pancake in 15 mins! - With any leftovers
I almost always have spring onions and carrots in my fridge, so this is a quick and easy recipe which I can make anytime with ingredients that I have at home. The amounts of ingredients do not need to be so specific, and can be adjusted according to the softness or hardness of the pancake batter. If it's too hard, then add a bit more water. If it's too soft, then add a bit more plain flour. This time I added carrots and spring onions only, but you can add anything you want such as prawns, squid, pork, chicken, beef, kimchi, cheese, etc!!By the way, my Korean husband told me that many Koreans crave this Korean pancake(pajeon) and Makgeolli(Korean rice wine) on a rainy day. ☔️ Interesting!#CookpadLunch

Spinach and ricotta filo pie
I had some leftover filo pastry so decided to make a pie. Spinach and ricotta go hand in hand and the little extra feta adds a nice saltiness to the mix. The leftovers were great the next day too. I just reheated it through in the oven. The pastry was still crispy and the flavours were arguably even better. I used oil spray on the pasty sheets but butter would work well too I think. You’ll need a spring form baking tin for this recipe, or a normal baking tin, well greased.

Miso Salmon and vegetable steam fry
Easy dish in which we can eat a lot of vegetables with salmon. You can add/change any other vegetables as you like. It is normally cooked in pieces of foil but I changed it to an eco-friendly way by not using foil - still tasty!
