Korean pancake in 15 mins! - With any leftovers

I almost always have spring onions and carrots in my fridge, so this is a quick and easy recipe which I can make anytime with ingredients that I have at home.

The amounts of ingredients do not need to be so specific, and can be adjusted according to the softness or hardness of the pancake batter. If it's too hard, then add a bit more water. If it's too soft, then add a bit more plain flour.

This time I added carrots and spring onions only, but you can add anything you want such as prawns, squid, pork, chicken, beef, kimchi, cheese, etc!!

By the way, my Korean husband told me that many Koreans crave this Korean pancake(pajeon) and Makgeolli(Korean rice wine) on a rainy day. ☔️ Interesting!

Ingredients

  1. Pancake batter
  2. 3big spoonfuls Plain flour (I didn’t measure properly, but please see the step photo below. Also, you can add rough amount for this recipe!)
  3. 3table spoons Potato starch (or corn starch)
  4. 1Egg
  5. 130 mlWater
  6. Few drops Soy sauce
  7. 1 tea spoonKorean dashida stock powder (or Chinese chicken stock powder)
  8. Ingredients
  9. 2 stalksSpring onion
  10. 1Carrot
  11. Any other leftover or your favourite ingredients!
  12. Dipping sauce
  13. 2 table spoonSoy sauce
  14. 1 table spoonRice vinegar
  15. 1/2 table spoonSesame oil
  16. As much as you like Korean chilli flakes
  17. As much as you like White sesame seeds
  18. 1 pinchSalt

Cooking Instructions

    Prepare a bowl and add all the ingredients for the pancake batter(plain flour, potato starch, egg, water, soy sauce, dashida powder).

    Cut spring onion into thin slices and cut carrot into strips. Put these ingredients in the bowl and mix with the pancake batter.

    Place some sesame oil in a frying pan and wait until the pan becomes hot. Drop a bit of pancake batter into the pan. If it sizzles, it is ready to start cooking. Pour all the pancake batter and spread it evenly and thinly around the pan. Cook under the medium heat. Turn the pancake over when you see the surface of the pancake is cooked. When both sides are cooked and become crispy, it's ready to serve!

    Mix all the ingredients for the dipping sauce. The pancake is tasty as it is, but you can enjoy with the sauce too!
