Savoury minced beef and mashed potatoes with creamed carrots and swede

This looks like a lot of ingredients but if you prepare them in advance the cooking part is relatively quick and simple 👍😂

Ingredients

  1. 450 gminced beef
  2. 170 gdiced onion
  3. 140 gdiced carrots
  4. 130 gfrozen grean beans
  5. 100 gchopped celery
  6. 3garlic cloves peeled and chopped
  7. 3 tablespoonsoil
  8. 1 teaspoonchopped oregano
  9. 1 teaspoonchopped sage
  10. 1 tablespoonsmoked paprika
  11. 440 gcan of plumb tomatoes
  12. 1beef oxo cube
  13. 1knorr red wine stock cube
  14. 1 glassred wine
  15. 1 cupwater
  16. 1 handfulfresh chopped parsley
  17. 500 gpotatoes peeled and diced
  18. 90 gbutter
  19. 300 gcarrots peeled and chopped
  20. 200 gswede peeled and diced
  21. 4 sliceswhite bread

Cooking Instructions

    Prepare potatoes, place in a saucepan and cover in water. Do the same with the chopped carrots and diced swede placing them together in the same pan. Bring both pans to a boil and simmer until cooked.

    At the same time add the oil to a heavy bottomed pan (I use my wok) over a flame. When hot add the diced carrots, onions and garlic. Stir frying for 5 minutes. Add the celery and continue to fry for another couple of minutes.

    Add the minced beef and continue to fry until the meat has coloured. Add the oregano and sage and crumble the oxo cube into the mix.

    Add a can of plum tomatoes and break them up while stirring the mix together.

    Add the paprika, the glass of wine, the cup of water and the knorr stock cube. Reduce the heat to a simmer stirring regularly. Continue to do this until the sauce starts to thicken. Add the green beans and continue to stir. Add salt and pepper to taste. Add the fresh parsley to the mix.

    Drain the potatoes and add seasoning and butter and mash the potatoes together.
    Do the same with the carrots and swede.

    Place a portion of the mashed potato and the carrots and swede onto a suitable dish (I used a bowl) add a potion of the mince to it. Garnish with fried triangles of bread and serve.
