Hello! You can omit the vinegar, but you should consume it right away. Or you can use regular white vinegar, only a bit, since it's quite strong.

Thank you for your answer. I actually have rice vinegar, I'll dare my self to use it a bit 🤭😁. I usually use it for making cucumber pickle. This the picture of my rice vinegar. I hope the result won't be too sour.
