Maple-Soy Sauce Red Snapper

I used this recipe as a blueprint. Instead of maple syrup, I used agave syrup, mixed it with the soy sauce, added a sprinkle of aleppo pepper and a pat of unsalted butter. I cooked the snapper first. When I turned it over, I added the onion and then just before the snapper was done, I added a handful of fresh spinach. I then added the sauce (at low temperature), made sure everything was coated, and then served it on a bed of rice topped by the spinach and onion, drizzled the rest of the sauce over the top, and garnished with green chopped scallion and chopped salted peanuts. YUM!!
