Recipe sounds good, but I also suggest trying seasoned salt as the rub, and use root beer soda pop instead of real beer, adds alot more of flavor!

Love these! My family rarely drinks beer and never from cans (we're beer snobs lol). We take canned veggies (whatever you're having with the chicken), empty out the veggies, pull off the label, scrub off the glue, fill the can a little more than half way with bbq sauce and stuff the chickens with that instead of beer cans.

Finally made this, and it was as juicy and yummy as promised! After cleaning and drying out the chicken in the fridge for 6 hrs, I seasoned under the skin with pre-made chicken rub mix and added some seasoning to the half full beer can with a sliver of lemon and a couple cloves of sliced garlic. I plugged the neck opening with an onion, covered up with the loose skin secured with a toothpick as was suggested in comments, (was hilarious trying to wedge it in cuz the onion was too big!) Sprinkled a tiny bit of the seasoning onto the oiled skin and added lightly seasoned baby carrots, chopped leeks, red onion and celery in the roasting pan. Was one of the best oven roasted chickens I have ever had! My family agreed. Thanks for posting!!!!

take a onion and shove it in the neck, then pull loose skin around it and pin with toothpicks to seal it. keeps the steam in the chicken.

one of my favorite ways to cook chicken! try it with wine, garlic and herbs in the can instead of beer.

I rub down the chicken with mayonnaise first then sprinkle paprika and onion powder. I also add Worcestershire sauce to the beer with a little bit of garlic and onion powder. A family favorite :ohyeaah
