Hi! Thanks for the question, which is a good one! I have not personally tried substituting anything for the cream cheese, so I can’t make any promises that the cookies’ texture will work out. However, you could try using sour cream instead. Other potential substitutes may include ricotta cheese or Greek yogurt. I would probably stick to using the full fat versions of any of these. Alternatively, you could simply try using 1.5 tablespoons of butter instead of the cream cheese. I think that the texture with all butter may not be as soft as when using cream cheese, but it is worth a try. Please let me know what you end up trying, and how things turn out. Oh! One other thought in addition to my comments above: if the texture of the dough is way too gooey/sticky, you can always add a little more flour. But - this may result in a harder cookie. If it’s too frustrating to roll the dough out (even after chilling it), you could just make drop cookies with the dough instead. Drop rounded Tablespoons of dough on a parchment paper-lined cookie sheet, then flatten slightly with the bottom of a drinking glass dipped in sugar and bake as instructed, keeping an eye on them so they don’t over bake.
