This isn't ceviche. It sounds more like a shrimp cocktail. Ceviche is actually when the shirmp or fish is cooked by soakimg in the lime juice

Hence the 1/2 cup of lime juice with 6 cups of water in a Dutch oven.

google ceviche. the lime juice itself cooks the shrimp. you dont boil it. the "sauce" in ceviche is not red.

its a common dish in mexican culture. its typically shrimp or tilapia ceviche. what you are making simply isnt ceviche.
