I used to use "Pearlagar-8" in Japan. I live in Canada now. This is why I use gelatin instead. If you want to use agar, add agar equal to 3% of water volume (ex. water 1000ml / agar 30g). Please whisk together agar and sugar before adding to hot coffee. Thank you!
