Boil peel and smash the potatoes. Chop the onions, tomatoes and coriander leaves finely.

Make all the chutney's. Green chutney - blend all ingredients. Add water as required. Sweet and sour chutney - soak all the ingredients in hot water. Then extract juice from kokum. Blend the dates. Mix all ingredients together and strain if required. Then add water. To make garlic chutney - soak the red chilli. Blend all ingredients together and strain if required. Add water as required. All chutney's are ready.

Now take a plate, place the puri's then potatoes, tomatoes and onions. Then sprinkle chat masala and salt. Add the chutney's. Garnish with sev and coriander leaves.
