Yellow Lentil Soup with Rice

Pick through the lentils to remove any debris, then wash them with the rice and drain.

Roughly chop the vegetables.

In a pot over the stove, combine the rice, lentils, onion, potato, carrot, half of the parsley, and 8 cups of water.

Cook until fully done (about 40 minutes).

Once cooked, turn off the heat and let it cool slightly (it will absorb all the water).

Add the remaining warm water to the pot and stir.

Blend the soup in batches until smooth.

Return to the pot and add the remaining ingredients.

Bring to a boil, then reduce the heat and let simmer for 3 minutes, stirring occasionally.

Serve hot.
