Ingredients

  1. 1/3 cupshredded Gruyère cheese (40 grams)
  2. 3 tablespoonsshredded Mimolette cheese (25 grams)
  3. 1 pinchsalt
  4. 5 1/2 tablespoonsunsalted butter (75 grams)
  5. 1 cupall-purpose flour (150 grams)
  6. 1 cupwater (about 240 ml)
  7. 4eggs

Steps

  1. 1

    Preheat the oven to 410°F (210°C).

  2. 2

    Combine the butter, water, and salt in a saucepan and bring to a boil.

  3. 3

    Remove from heat, add the flour, and mix well. Return to low heat for a moment, stirring constantly.

  4. 4

    Remove from heat again, then add the eggs one at a time, mixing well after each addition. Stir in the cheeses.

    Spoon or pipe small balls of dough onto a parchment-lined baking sheet and bake for about 25 minutes.
