My Nona had 11 babies in Sicily ( my dad was one of the siblings) her cooking lives on to my generation and to my kids !! This recipe is easy, tasty and budget friendly. And as always you can add or take away in recipes to fit your taste.

I PKG bacon cooked crisp (grease reserved)
1-2 lbshomemade noodles cooked al dente
1-2sweet Vidalia onions carmalized
Fresh baby sweet peas (optional)
Scallions to garnish

Cook bacon as normal, reserve grease and set aside.

Boil noodles for 5-8 mins until Al dente drain water (do not rinse !!!)

Carmalize sweet onions until soft, tender and light brown in color.

Add sweet onions to pot of noodles and slowly stir in 1-2 tbsp of reserve bacon grease. Break up bacon into bits add to noodles and onions. Add fresh baby sweet peas if desired.

Top with fresh scallions for garnish.
