This is a Portuguese recipe my mom always makes, very tasty and filling side dish or main meal. Also very tasty reheated.

The night before, lay out 1/4 loaf of your bread of choice to harden. When you are ready to cook, piece the bread into small chunks (no crust).

Get one medium saucepan and add finely diced onion in the pan with vegetable oil. Cook on medium heat until onions are carmelized.

In another medium pot, add tomatoes to boiling water on high heat for 1 minute or enough to blanch them.

Tomatoes should be easy to peel and if they are too hot, submerge in cold water until cooled and then peel and cut the green part of the tomato. also quarter and remove seeds.

Once tomatoes are peeled puree them until there are no chunks, and add the tomatoes to the onion.

Add the garlic salt, and salt, and combine. Then beat eggs in a bowl.

Add bread then, at low heat add eggs to the mixture in the pan but be sure to do this fast so none of the eggs cook.

Once stirred, mixture will lighten. once combined completely, take off heat and enjoy :))
