Preheat the oven to 400°F (200°C).

Slice the onion into rings. Sauté the onion and diced ham in the olive oil for 5 minutes.

In a mixing bowl, whisk together the eggs, rice milk, salt, pepper, shredded Swiss cheese, and nutritional yeast.

Prick the pie crust with a fork.

Spread the onion and ham mixture evenly over the crust. Pour the egg mixture on top.

Bake for 25 to 30 minutes.
