First start with your Cajun seasoning, simply mix all the ingredients listed above together.

De-stone the avocado then mash and add a splash of lemon juice

Add your couscous and a tablespoon of your Cajun seasoning to a bowl with 90ml of boiling water and a half tablespoon of your coconut oil, cover and leave for 10 mins.

Wash your spinach thoroughly

Add 1to2 teaspoon(s) of coconut oil to a pan and heat, once up to heat crack in your eggs and fry (I prefer this with a runny yoke)

Once all is cooked serve in layers, fluff your couscous with a fork and create the bottom layer with this.

Then spread the spinach to create you second layer.

Use your avocado to create the third layer

And place your eggs on top
