Ingredients

  11. 3passion fruits
  12. 2 1/2 tablespoonssugar (about 30 grams)
  13. 1 teaspoongelatin (about 3 grams)

Cooking Instructions

    Separate the cream from the Oreo cookies and crush the cookies finely (you can also put them in a bag and crush them).

    Melt the unsalted butter using a double boiler and mix well with the crushed Oreo cookies. Place the mixture into a mold and spread evenly to form the crust (press the crust slightly firm at the bottom of the mold for a sturdier base).

    Add 1/4 cup sugar to the cream cheese and mix well with a whisk. Add 1 1/2 tablespoons sugar to the heavy cream and whip with a mixer or whisk, being careful to whip for only 3 minutes to prevent the cream from separating. Combine the cream cheese and whipped cream until well blended and refrigerate.

    Cut the passion fruits in half and strain to get about 1/2 cup juice (or keep the seeds if preferred). Mix 1/4 cup passion fruit juice with 1/4 cup water, bring to a boil, and add 2 1/2 teaspoons gelatin, stirring until completely dissolved. Let cool and mix with the cream mixture from step 3, then pour this cream into the prepared Oreo crust and refrigerate for about 3 hours.

    Mix the remaining 1/4 cup passion fruit juice with 1/4 cup water and 2 1/2 tablespoons sugar, bring to a boil, and add 1 teaspoon gelatin, stirring until completely dissolved. Let the mixture cool and pour over the top of the cake to create a beautiful yellow layer. Refrigerate for about 1 hour before serving.

    Remove the cake from the mold by applying a hot towel around the outside of the mold for about 3 minutes to release the cake from the sides, making it easy to remove.
